Leftover Lentils with fresh Broccoli

Simple Healthy Lunch

Lentils Ingredients (cooked the day before):
2 cups lentils with about 4 cups water
Half medium carrot chopped
Half medium onion chopped
1 ½ cups pumpkin
2 tsp garlic
2 tsp turmeric
2 tsp parsley
To taste: cayenne pepper, white pepper, salt

2 pot spoons lentils
1 hand full broccoli

  • Wash and place fresh broccoli in a microwaveable bowl
  • Place 2 pot spoons of leftover lentils over the fresh broccoli
  • Microwave for about 2 mins
  • Stir in cayenne pepper for spicy taste

You can use fresh cooked lentils
